Vegetable Pizza?

Years ago, congress ruled that pizza could be counted as a vegetable due to the amount of tomato paste on it… On one hand, that’s great news. On the other… WHAT?!? Now wonder why obesity, heart disease, and diabetes are all on the rise.

Unfortunately, I’m here to break the news. I’m sorry, pizza is not a vegetable; so the next time you aim for a “healthy” New York style pizza dinner, I urge you to rethink that decision. While the simple carbs in the crust can replenishing your body after a long, hard workout, there’s simply too many of them. In other words, unless you’re The Rock, you don’t need them. Not to mention the multitude of fat from the cheese and it doesn’t help that there’s minimal protein. On the bright side, there is an alternative thanks to the unbelievably creative and healthy foodies out there.

These days, people are making pizza crust out of everything in an effort to settle that craving while still following a healthy diet. There's everything from broccoli crusts, to sweet potato, eggplant, zucchini, mushroom, and of course cauliflower crusts (my personal favorite). Try out the cauliflower crust first. The vegetable itself doesn’t have a potent flavor but it takes on so many flavors at the same time. Thanks to fitness guru, Paige Hathaway, I’ve only ever tried one cauliflower crust recipe and I won’t ever look to change it. Yes, it was THAT good. One quick tip is that you MUST try to get as much liquid out of the vegetable as possible before baking. Otherwise, you’ll have a soggy mess that will require a fork and knife to eat. You can find the link to the video on the bottom of this post!

I’m not going to lie, making this crust is a bit of a process. If you like to cook and experiment this will be a fun activity for you. If you’re not a cook, there’s still good news. Many stores have started to order pre-made cauliflower pizza crusts making it much more time friendly. To end on a cheesy note, you actually can make pizza a vegetable. Try out one of these veggie crusts this week and get your daily dose of REAL vegetables.
